Prepare the Ingredients

Slice the onion, zucchini, carrots, and mushrooms. Trim the green beans and cut the pumpkin into cubes.

Cook the Meat

In a large pot or skillet, heat the vegetable oil over medium-high heat. Add the meat and cook until browned, about 5-7 minutes.

Add Onions and Curry Paste

Add the sliced onion to the pot and cook until softened, about 3 minutes. Stir in the red curry paste and cook for another 2 minutes until fragrant.

Add Coconut Milk and Vegetables

Pour in the coconut milk and bring to a simmer. Add all the prepared vegetables (green beans, zucchini, carrots, broccoli, mushrooms, pumpkin, bamboo shoots, and baby corn) to the pot.

Simmer

Reduce the heat to low and let the curry simmer for about 15-20 minutes, or until the vegetables are tender. Stir occasionally.

Season and Serve

Add salt and sugar to taste. Stir in the Thai basil leaves just before serving. Serve hot over rice or noodles.
