Make the Filling
In a large bowl, combine the ground chicken, ground pork, chopped celery, chopped bamboo shoots, minced garlic, white pepper, and Thai seasoning. Mix well until all ingredients are evenly combined.

Prepare the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water, fold it in half, and press the edges together to seal. Repeat until all filling is used.

Steam the Dumplings
Set up a steamer over boiling water. Place the dumplings in a single layer in the steamer basket, leaving space between them to expand. Cover and steam for about 15-20 minutes or until the filling is cooked through.
