Boil the Squid
In a pot of boiling water, add the cleaned squid and cook for about 2-3 minutes until tender. Do not overcook. Drain and allow to cool.

Grill the Squid
Preheat a grill or grill pan. Toss the boiled squid lightly with lime juice and grill for 2-3 minutes until slightly charred. Remove from heat.

Prepare the Salad
In a large bowl, combine the grilled squid, Japanese cucumber, red onion, cilantro, green onion, carrot, and mint leaves. Toss well.

Assemble the Dish
On a serving platter, create a bed of lettuce and shredded cabbage. Top with the squid salad mixture and drizzle with additional lime juice if desired.

Serve the squid salad immediately, garnished with extra herbs or lime wedges if desired.
