    Prepare the Ingredients

    Chop the zucchini, carrots, onion, and broccoli into bite-sized pieces. Trim the ends of the green beans and cut the baby corn in half.

    Cook the Meat

    Heat vegetable oil in a large pot over medium heat. Add the meat (or tofu) and cook until browned. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the onion and sauté until translucent. Then add the zucchini, carrots, green beans, broccoli, and baby corn. Cook for about 5 minutes, stirring occasionally.

    Add Coconut Milk and Curry Paste

    Stir in the Panang curry paste, mixing it well with the vegetables. Pour in the coconut milk and stir until combined.

    Simmer

    Return the cooked meat (or tofu) to the pot. Bring to a gentle simmer, cover, and let cook for 15-20 minutes, or until the vegetables are tender.

    Finish with Thai Basil

    Stir in the Thai basil and season with salt to taste. Cook for an additional 2 minutes.

    Serve hot with steamed rice or noodles.
