Cooking Instructions
- 1
Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.
- 2
Make the Pad Thai Sauce
In a bowl, mix together 3 tablespoons of fish sauce, 2 tablespoons of tamarind paste, 1 tablespoon of sugar, and 1 tablespoon of lime juice. Set aside.
- 3
Cook the Protein
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the chicken, shrimp, or tofu, and cook until done. Remove from the skillet and set aside.
- 4
Sauté Aromatics
In the same skillet, add another tablespoon of oil. Add minced garlic and sauté for 30 seconds until fragrant.
- 5
Add Noodles and Sauce
Add the soaked noodles to the skillet along with the prepared Pad Thai sauce. Toss to combine and cook for 2-3 minutes until the noodles absorb the sauce.
- 6
Incorporate Eggs and Vegetables
Push the noodles to one side of the skillet. Crack the eggs into the other side and scramble them. Once cooked, mix the eggs with the noodles. Add bean sprouts and green onions, and toss to combine.

Finish and Serve
Return the cooked protein to the skillet and mix everything together. Serve hot, garnished with crushed peanuts, cilantro, and additional green onions.
