Prepare the Noodles
Cook the wide rice noodles according to the package instructions. Drain and set aside.

Make the Gravy Sauce
In a bowl, mix the soy sauce, oyster sauce, cornstarch, water, and pepper. Stir until well combined and set aside.

Stir-Fry the Vegetables and Meat
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant. Add choice of meat and cook until browned. Then, add broccoli and carrots, cooking until tender.

Combine with Noodles and Gravy
Add the cooked noodles to the skillet. Pour the gravy sauce over the noodle mixture, stirring well to combine. Cook for an additional 2-3 minutes until everything is heated through and coated in the sauce.

Serve hot, garnished with additional pepper or sesame seeds if desired.
