Prepare the Sweet Potatoes
Peel the purple sweet potatoes and slice them into thin rounds, about 1/4 inch thick.

Make the Coconut Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and coconut milk. Whisk until smooth and well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Dip and Fry
Dip each sweet potato slice into the coconut batter, allowing any excess to drip off. Carefully place them into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare Pineapple Sauce
In a small saucepan, combine chopped pineapple, brown sugar, rice vinegar, and soy sauce. Cook over medium heat until the sauce thickens slightly, about 5-7 minutes.

Plate the fried sweet potatoes and drizzle with the homemade pineapple sweet and sour sauce before serving.
