Crispy Chicken
Method
Preparation and Cooking
- 1
Prepare the Chicken
Cut the boneless skinless chicken breast into bite-sized pieces and set aside.
- 2
Make the Batter
In a bowl, mix the all-purpose flour, salt, black pepper, garlic powder, and paprika. Slowly add the coconut milk, stirring until smooth.
- 3
Coat the Chicken
Dip each piece of chicken into the batter, allowing excess to drip off, then roll in coconut flakes to coat.
- 4
Heat the Oil
In a large skillet, heat the oil over medium-high heat until hot.
- 5
Fry the Chicken
Carefully add the coated chicken pieces to the hot oil in batches, frying until golden brown and cooked through, about 4-5 minutes per side.
- 6
Drain and Serve
Remove the chicken from the oil and place on paper towels to drain excess oil. Serve hot with homemade chicken red sauce.
