
Chiang Mai Fried Rice Recipe

Cook the Chicken
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add Rice and Eggs
Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Mix the eggs with the vegetables. Add the cooked jasmine rice and stir well to combine.

Season the Fried Rice
Add the cooked chicken back to the skillet. Pour in the soy sauce, and season with salt and pepper to taste. Stir everything together and cook for an additional 2-3 minutes, allowing the rice to heat through.

Garnish and Serve
Remove from heat. Garnish with chopped green onions and cilantro before serving. Enjoy your Chiang Mai Fried Rice!
