Local Fish with Porchetta and Pear in Red Wine

Preparation Steps

    Prepare the Pears

    Peel and slice the pears. In a saucepan, combine the sliced pears and red wine. Simmer on medium heat until the pears are tender and the wine reduces to a syrupy consistency, about 10 minutes. Set aside.

    Cook the Fish

    Season the fish fillets with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Add the fish fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from heat.

    Prepare the Porchetta

    Slice the porchetta into thin pieces and briefly warm it in the same skillet used for the fish for about 2 minutes.

    Assemble the Dish

    On a serving plate, arrange the cooked fish fillets. Top with slices of porchetta, a handful of fresh arugula, and the red wine pears. Finish with shavings of provolone cheese and a sprinkle of fresh herbs.

    Serve immediately while warm, drizzled with any remaining pan juices if desired.
