    Prepare the Fries

    Wash and cut the Russet potatoes into fries. Rinse them in cold water and pat dry with a towel.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Make the Chili

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Stir in chili powder, diced tomatoes, kidney beans, salt, and pepper. Simmer for 15 minutes.

    Assemble the Dish

    Place a generous portion of fries on a serving platter. Top with the chili mixture and sprinkle shredded cheddar cheese on top.

    Melt the Cheese

    Place the assembled fries under a broiler for 2-3 minutes until the cheese is melted and bubbly.

    Remove from the oven, garnish with chopped green onions, and serve immediately.
