Tamale Preparation

Prepare the Corn Husks
Soak the corn husks in warm water for about 30 minutes to make them pliable.

Make the Masa Dough
In a large bowl, mix masa harina, baking powder, salt, and vegetable oil. Gradually add chicken broth until a soft dough forms.

Assemble the Tamales
Take a soaked corn husk and spread about 2-3 tablespoons of masa dough onto the center. Add 1-2 tablespoons of shredded chicken on top. Fold the sides of the husk over the filling and then fold the bottom up to secure.

Steam the Tamales
Place the tamales upright in a steamer pot. Cover with a damp cloth and steam for about 1 hour or until the masa is firm and cooked through.

Serve
Serve the tamales warm with Omar’s green sauce or chili on the side.
