Preparing the Pudding

1. Soak the Tapioca

In a medium bowl, soak the tapioca pearls in water for about 30 minutes to 1 hour. This will help soften them before cooking.

2. Combine Ingredients

In a saucepan, combine the soaked tapioca (drained), milk, sugar, and salt. Stir well to combine.

3. Cook the Mixture

Place the saucepan over medium heat and cook the mixture, stirring frequently until it comes to a gentle boil. Once boiling, reduce heat to low and continue to cook for about 10-15 minutes until the tapioca pearls become transparent.

4. Add Eggs and Vanilla

In a separate bowl, whisk the eggs lightly. Slowly add about 1/2 cup of the hot tapioca mixture to the eggs, whisking constantly to temper them. Then pour the egg mixture back into the saucepan and stir in the vanilla extract.

5. Final Cooking

Continue to cook the pudding for an additional 5 minutes, stirring constantly until it thickens to your desired consistency.

6. Cool and Serve

Remove the pudding from heat and let it cool slightly. You can serve it warm or refrigerate it to serve it chilled.
