Method

Preparation

  1. 1

    Prepare the Vegetables

Chop the onion and bell pepper into bite-sized pieces. Mince the garlic cloves and set all vegetables aside.

  2. 2

    Prepare the Crab Claws

If using frozen snow crab claws, thaw them completely. Rinse under cold water and set aside.

  3. 3

    Cook Rice

In a pot, add 2 cups of jasmine rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed. Fluff with a fork and keep warm.

Cooking

  1. 4

    Sauté Vegetables

In a large pot or skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they begin to soften.

  2. 5

    Add Garlic and Spices

Add the minced garlic, ground turmeric, ground cumin, and chili flakes to the pot. Stir and cook for an additional 2 minutes until fragrant.

  3. 6

    Incorporate Curry Base

Add the red curry paste, fish sauce, and brown sugar to the pot. Mix well and cook for another 2 minutes.

  4. 7

    Add Coconut Milk and Crab

Pour in the coconut milk and bring the mixture to a gentle simmer. Add the snow crab claws and ensure they are coated with the sauce. Cover and cook for 10-12 minutes until the crab is heated through.

Serving

  1. 8

    Serve the Dish

Serve the snow crab claw curry over a bed of jasmine rice. Garnish with fresh cilantro and lime wedges on the side.
