Method

Preparing the Marinade

    Combine Marinade Ingredients

    In a mixing bowl, whisk together the soy sauce, peanut butter, brown sugar, lime juice, minced garlic, grated ginger, and red pepper flakes until smooth.

    Marinate Chicken

    Place the chicken strips in a large resealable bag or bowl and pour half of the marinade over the chicken. Seal or cover and refrigerate for at least 1 hour, preferably overnight.

    In a separate bowl, place the beef strips and pour the remaining marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably overnight.

Preparing the Vegetables

    Prepare Vegetables

    In a bowl, combine the bell peppers, zucchini, and mushrooms. Drizzle with a little olive oil, salt, and pepper and toss to coat.

Assembling the Satay

    Thread the marinated chicken, beef strips, and prepared vegetables onto separate soaked skewers, alternating between meat and vegetables as desired.

Cooking the Satay

    Preheat the grill to medium-high heat. Grill the skewers for about 4-5 minutes on each side, or until the chicken and beef are cooked through and the vegetables are tender.

Preparing the Peanut Sauce

    In a saucepan over medium heat, combine the coconut milk, peanut butter, soy sauce, lime juice, garlic powder, and red pepper flakes. Stir until smooth and heated through.
