    Soak Noodles

    Begin by soaking the wide rice noodles in warm water for about 30 minutes, or until they are soft but still slightly chewy.

    Prepare Ingredients

    While the noodles are soaking, slice the chicken breast into thin strips, chop the Chinese broccoli, and julienne the carrots.

    Mix Sauce

    In a bowl, combine the soy sauce, dark soy sauce, oyster sauce, sugar, and white pepper. Mix well and set aside.

Cooking

    Cook Chicken

    In a large wok or frying pan, heat 2 tablespoons of oil over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.

    Add Vegetables

    Add the chopped Chinese broccoli and julienned carrots to the wok. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

    Add the soaked noodles into the wok with the chicken and vegetables. Pour the prepared sauce over the noodles, and toss everything together to coat evenly.

    Push the noodles to one side of the wok, crack the eggs into the empty space, and scramble them until just set. Then mix the scrambled eggs into the noodles.

    Stir-fry everything together for another 2-3 minutes until everything is heated through and the noodles have absorbed the sauce.
