    Soak the Noodles

    Place the wide rice noodles in a bowl of warm water and let them soak for about 30 minutes, or until they are soft. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, and lime juice. Set aside.

    Cook the Protein

    In a large wok or skillet, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and stir-fry for about 3-4 minutes until cooked through. Add the shrimp and cook for an additional 2 minutes until they turn pink. Remove the protein from the pan and set aside.

    Stir-Fry Vegetables

    In the same wok, add another tablespoon of oil if needed. Add the minced garlic, sliced onion, bell pepper, carrot, and chili peppers. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

    Add the soaked noodles to the skillet along with the cooked protein. Pour the sauce over the mixture and toss everything together. Cook for an additional 2-3 minutes until everything is heated through and well combined.

    Add Basil

    Remove the wok from heat and toss in the Thai basil leaves. Stir until just wilted.

Serving

    Serve the Pad Kee Mau hot, garnished with lime wedges and chopped peanuts on top.
