    Prepare the Noodles

    Bring a large pot of water to a boil. Add the wide rice noodles and cook for 6-8 minutes, or until al dente. Drain and rinse with cold water. Set aside.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, dark soy sauce, and sugar. Set aside for later use.

Cooking

    Cook the Chicken

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and cook for about 5-7 minutes, or until fully cooked. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add another tablespoon of vegetable oil. Add minced garlic, broccoli florets, and sliced carrots. Stir-fry for about 3-4 minutes until vegetables are tender.

    Add Noodles and Sauce

    Add the cooked noodles and sauce mixture to the pan with vegetables. Toss everything together gently to avoid breaking the noodles. Cook for another 3-4 minutes until everything is heated through.

    Add Eggs

    Push the noodle mixture to one side of the pan. Crack the eggs on the empty side and scramble them until fully cooked. Mix the scrambled eggs into the noodles.

    Finish with Seasoning

    Add the cooked chicken back to the pan along with chopped green onions, salt, and black pepper. Toss everything together and cook for an additional 2 minutes.
