Prepare the Ingredients

Wash and chop all vegetables: cut the bell pepper into strips, slice the carrot into thin rounds, and slice the green onions. Cut the chicken breast into bite-sized pieces.

Cook the Chicken

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Stir-fry the Vegetables

In the same skillet, add the remaining tablespoon of sesame oil. Add broccoli, bell pepper, carrot, and snow peas. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

In a small bowl, mix together the peanut butter, soy sauce, honey, minced garlic, minced ginger, and red pepper flakes until well combined.

Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables, stirring to coat everything evenly. Cook for an additional 2-3 minutes until everything is heated through.
