Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well combined.

  2. 2

    Marinate the Steak

Place the rib eye steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to high heat (about 450°F to 500°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  2. 4

    Charbroil the Steaks

Remove the steaks from the marinade and let excess marinade drip off. Place the steaks on the hot grill. Cook for about 4-5 minutes on one side without moving them to get nice grill marks.

  3. 5

    Flip the Steaks

Using tongs, carefully flip the steaks and grill for an additional 4-5 minutes for medium-rare, or longer to reach your desired doneness.

  4. 6

    Rest the Steak

Once cooked to your liking, remove the steaks from the grill and let them rest for 5-10 minutes. This allows the juices to redistribute throughout the meat.

Serving

  1. 7

    Plate and Serve

Slice the rib eye steak against the grain and plate it. Optionally, serve with grilled asparagus and baked potatoes on the side.
