Prep the Ingredients

Wash and chop all the vegetables into bite-sized pieces. Slice the bell pepper and green onions. Mince the garlic and grate the ginger.

Soak Cashews

If desired, soak the raw cashews in water for 30 minutes to soften them, then drain.

In a large skillet or wok, heat the olive oil over medium-high heat.
