Prepare the Vegetables

Wash and cut the eggplant, bell pepper, and onion into bite-sized pieces. Mince the garlic and set aside. Trim the ends of the green beans.

Make the Sauce

In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water until well combined. Set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
