Prepare the Fries
Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Cook the Steak
Season the NY strip steaks generously with salt and pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the steaks for about 4-5 minutes on each side for medium rare, or until desired doneness. Remove from skillet and let rest.

Make the Zweigelt Sauce
In the same skillet, lower the heat and add the chopped shallots. Sauté until translucent. Pour in the Zweigelt wine and beef broth, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat and simmer until sauce is reduced by half. Stir in butter until melted and smooth.
