Prepare the Spätzle Dough
In a large bowl, whisk together the flour, eggs, salt, and water until smooth. The batter should be somewhat thick but pourable. Let it rest for about 30 minutes.

Cook the Spätzle
Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the batter into the boiling water. Cook until the Spätzle float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauté the Vegetables
In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until browned. Then add the corn and Brussels sprout leaves, cooking until tender. Stir in the shredded smoked chicken, tarragon, and black pepper.

Combine and Serve
Add the cooked Spätzle to the skillet with the chicken and vegetables. Toss gently to combine and heat through. Serve warm, garnished with additional tarragon if desired.
