    Prepare the Glaze

    In a small bowl, mix the honey and Dijon mustard together until well combined. Set aside.

    Sear the Pork Chops

    Season the pork chops with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

    Cook the Mushrooms and Cabbage

    In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender. Add the shredded savoy cabbage and continue cooking for another 4-5 minutes until the cabbage is wilted.

    Add the Glaze and Wine

    Return the pork chops to the skillet and pour the honey-mustard glaze over them. Add the red wine and bring to a simmer. Cover and cook for about 15-20 minutes until the pork is cooked through and tender.

    Prepare the Spätzle

    Meanwhile, cook the spätzle according to package instructions. Drain and set aside.

    Serve

    Serve the pork chops on a platter with the sautéed mushrooms and cabbage, alongside the spätzle. Drizzle any remaining glaze from the skillet over the dish.
