Cooking Instructions

  1. 1

    Prepare the Ingredients

Gather all the ingredients and chop the butternut squash, kale, and macadamia nuts.

  2. 2

    Cook the Sausage

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spicy sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

  3. 3

    Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the diced butternut squash and cook for about 5 minutes until it begins to soften. Add the minced garlic and kale, cooking for an additional 3-4 minutes until the kale wilts.

  4. 4

    Combine Lentils and Sausage

Stir in the cooked lentils and browned sausage, mix well, and season with salt, pepper, and paprika. Cook for another 2-3 minutes until everything is heated through.

  5. 5

    Pan-Seared Salmon

In another skillet, heat a bit of oil over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin side down in the skillet. Cook for 4-5 minutes on each side or until cooked to your desired doneness.

  6. 6

    Plate the Dish

Serve the pan-seared salmon on top of the lentil and sausage mixture, garnished with chopped macadamia nuts.
