Prepare the Filling
In a skillet over medium heat, cook the diced smoked bacon until crispy. Add the ground beef and ground pork, cooking until browned. Season with salt and pepper. Remove from heat and let cool slightly.

Prepare the Cabbage
Blanch the Savoy cabbage leaves in boiling water for about 2 minutes until tender. Remove and let cool. Trim the thick stems if necessary.

Assemble the Rouladen
Take a cabbage leaf and place a portion of the meat mixture at one end. Roll tightly, tucking in the sides as you go. Secure with toothpicks if needed. Repeat with remaining leaves and filling.

Serve
Remove the rouladen from the pot and slice them in half. Plate with the vegetables and spoon the mushroom demi-glace over the top.
