Broccolini and Garlic Confit

Pork Schnitzel

    Prepare the Pork

    Pound the pork chops to about 1/4 inch thickness. Season with salt and pepper.

    Bread the Pork

    Dredge each pork chop in flour, dip in beaten eggs, and coat with bread crumbs.

    Fry the Pork

    Heat vegetable oil in a skillet over medium-high heat. Fry the schnitzels until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Mushroom Cream Sauce

    Sauté the Mushrooms

    In the same skillet, add butter. Once melted, add sliced mushrooms and minced garlic. Cook until mushrooms are browned.

    Make the Sauce

    Add vegetable broth and bring to a simmer. Stir in heavy cream, parsley, salt, and pepper. Cook until sauce thickens.

Broccolini and Garlic Confit

    Prepare the Broccolini

    In a pot of boiling salted water, blanch broccolini for 2-3 minutes until bright green. Drain and set aside.

    Sauté with Garlic

    In a skillet, heat olive oil and add garlic confit. Add blanched broccolini, season with salt and pepper, and sauté for about 5 minutes.

Spätzle

    Make the Dough

    In a bowl, mix flour, eggs, salt, and water until smooth.

    Cook the Spätzle

    Bring a pot of salted water to a boil. Press the dough through a spätzle maker or colander into the boiling water. Cook until they float, about 2-3 minutes. Remove and drain.
