    Prepare the Beef

    Cut the beef shoulder into 1-inch cubes and season with salt and pepper.

    In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

    Add the seasoned beef cubes to the pot and brown on all sides.

    Stir in the paprika, chopped carrots, and diced bell pepper. Cook for another 2-3 minutes until the vegetables are slightly softened.

    Pour in the beef broth and add bay leaves. Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours until the beef is tender.

    While the goulash is cooking, prepare spätzle according to the package instructions. Mix in fresh herbs such as parsley or chives before serving.

    Remove bay leaves from the goulash. Serve the goulash hot over the herbed spätzle, topped with a dollop of sour cream.
