    Prepare the Dough

    In a large bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Gradually add flour and salt, kneading until you have a smooth dough. Let it rise in a warm place for about 1 hour.

    Cook the Bacon

    While the dough is rising, cook the double-smoked bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then chop into small pieces.

    Shape the Pretzels

    Preheat your oven to 450°F (230°C). After the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Boil the Pretzels

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

    Sprinkle the pretzels with chopped bacon and chives. Bake in the preheated oven for 12-15 minutes or until golden brown.
