Cooking Instructions

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, paprika, cumin, garlic powder, salt, black pepper, and lemon juice. Mix well.

  2. 2

    Marinate the Game Hen

Rub the marinade all over the spatchcocked game hen, ensuring it’s well coated. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.

  3. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, set up for direct grilling.

  4. 4

    Grill the Game Hen

Place the marinated game hen skin-side down on the grill. Grill for about 15-20 minutes, then flip and continue grilling for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

  5. 5

    Grill the Vegetables

While the hen is grilling, add the corn on the cob and shishito peppers to the grill. Grill the corn for about 10-15 minutes, turning occasionally, and grill the shishitos until they are blistered, about 5-7 minutes.

  6. 6

    Grill the Peaches

Cut the peaches in half and remove the pit. Place cut-side down on the grill for about 3-4 minutes until they have grill marks and are slightly softened.

  7. 7

    Serve

Once everything is grilled, serve the game hen with the corn, shishitos, and grilled peaches on the side.
