    Prepare the Berries

    In a medium bowl, combine the mixed berries, granulated sugar, and lemon juice. Toss gently and let sit for at least 30 minutes to macerate.

    Make the Swiss Meringue

    In a heatproof bowl, combine the egg whites and granulated sugar. Place over a pot of simmering water, whisking constantly until the mixture reaches 160°F (70°C). Remove from heat and beat with an electric mixer until stiff peaks form and the mixture is glossy.

    Fold in Powedered Sugar

    Gently fold in the powdered sugar into the meringue until fully combined.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the meringue mixture.

    Assemble the EIS KÜCHLEIN

    In a serving dish or individual cups, layer the meringue mixture, chopped pistachio nuts, and macerated berries. Repeat layers as desired.

    Freeze

    Cover and freeze for at least 4 hours or until set. Serve chilled.
