Pound the chicken breasts to an even thickness using a meat mallet. Season both sides with salt and black pepper.

Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Toast the pretzel buns lightly. Layer with lettuce, the fried chicken schnitzel, sliced tomatoes, and dill pickles. Spread house aioli on the top bun before closing.
