Prepare the Chicken
In a large skillet, heat a tablespoon of oil over medium heat. Season the chicken thighs with salt, black pepper, and paprika. Add the chicken to the skillet and brown on both sides, about 5 minutes per side. Remove the chicken and set aside.

Create the Sauce
Return the chicken to the skillet. Pour in the chicken broth and bring to a simmer. Reduce the heat to low, cover, and let it braise for about 25-30 minutes or until the chicken is cooked through.

Finish the Dish
Remove the chicken once cooked and stir in the heavy cream to the skillet. Allow the sauce to thicken for about 5 minutes. Adjust the seasoning with more salt and pepper if necessary.

Serve the chicken paprikash over herbed spätzle, topped with the creamy sauce and a dollop of sour cream.
