Prepare the Filling
In a large bowl, combine the sliced apples, chopped hazelnuts, sugar, ground cinnamon, vanilla extract, and lemon juice. Toss well to coat and set aside for 15 minutes to allow the flavors to meld.

Prepare the Pastry
Preheat your oven to 375°F (190°C). Roll out one sheet of puff pastry on a lightly floured surface to a rectangle about 1/8 inch thick. Transfer to a baking sheet lined with parchment paper.

Assemble the Strudel
Spread the apple and hazelnut mixture evenly over the pastry, leaving a 1-inch border along the edges. Carefully roll the pastry over the filling, tucking in the edges as you go to create a log shape. Seal the edges with the beaten egg.

Serve
Allow the strudel to cool slightly before slicing. Serve warm with whipped cream, a sprinkle of toasted almonds, and a scoop of vanilla bean ice cream.
