Fresh Rice Paper Rolls

    Prepare the filling

    In a mixing bowl, combine the Thai basil, julienned carrots, cucumbers, cooked vermicelli noodles, and sliced celery. Mix gently to combine.

    Make the sauce

    In a blender, combine the roasted yellow bell pepper, honey, rice vinegar, soy sauce, minced garlic, and salt. Blend until smooth. Adjust seasoning to taste.

    Assemble the rolls

    Soak one rice paper wrapper in warm water for about 10-15 seconds or until softened. Lay it flat on a clean surface. Place a small amount of the filling mixture in the center of the wrapper. Fold the sides over the filling, then roll it up tightly from the bottom to the top.

    Serve

    Repeat the process for the remaining rice paper wrappers. Serve the fresh rice paper rolls with the honey yellow pepper sauce on the side for dipping.
