Prepare the Lobster
Bring a pot of salted water to a boil. Add lobster tails and cook for about 8-10 minutes until they turn bright red. Remove from water, let cool, and then remove the meat from the tails. Cut the lobster meat into bite-sized pieces.

Cook the Rice Noodles
Soak the rice noodles in warm water for about 20 minutes or until softened. Drain and set aside.

Make the Egg Crepe
In a non-stick pan, heat a little oil over medium heat. Beat the eggs in a bowl and pour into the pan, swirling to create a thin layer. Cook for about 1-2 minutes until set, then flip and cook for another minute. Remove from pan and slice into strips.

Combine Ingredients
In a large bowl, combine the cooked rice noodles, lobster meat, bean sprouts, sliced scallions, and egg strips. Toss gently.

Serve
Plate the lobster pad thai, top with crushed peanuts, pickled radishes, and lime wedges. Garnish with additional scallions if desired.
