    Prepare the Filling

    In a mixing bowl, combine the shrimp, chopped cilantro, minced garlic, Thai basil, fish sauce, lime juice, cornstarch, salt, and black pepper. Mix well until the shrimp is evenly coated with the ingredients.

    Assemble the Rolls

    Take one spring roll wrapper and place about 2 tablespoons of the shrimp mixture in the center. Fold the sides over the filling and roll tightly, sealing the edges with a little water. Repeat with the remaining wrappers and filling.

    Fry the Rolls

    Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the rolls in batches and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Dipping Sauce

    In a small bowl, combine diced pineapple, lime juice, and a pinch of salt to make a fresh dipping sauce.

    Serve the crispy shrimp rolls hot with the pineapple dipping sauce on the side.
