    Prepare the Rice Noodles

    Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

    Make the Egg Crepe

    In a non-stick skillet, heat a little oil over medium heat. Whisk 1 egg and pour it into the skillet, tilting to coat the bottom. Cook until set, then flip and cook for an additional 30 seconds. Remove and repeat with the remaining eggs. Cut the crepes into strips.

    Sauté the Prawns

    In a large pan or wok, heat oil over medium-high heat. Add the tiger prawns and sauté until they turn pink and are cooked through, about 3-4 minutes. Remove from the pan and set aside.

    Combine Ingredients

    In the same pan, add the soaked rice noodles, sautéed prawns, scallions (chopped), and bean sprouts. Stir-fry for another 2-3 minutes until everything is heated through.

    Serve

    To serve, plate the noodle mixture and top with crispy egg crepe strips, ground peanuts, and pickled radishes. Enjoy your Kung Pad Thai!
