Prepare the Filling
In a large skillet over medium heat, brown the ground beef. Add diced onion and minced garlic, cooking until the onion is translucent. Stir in cumin, salt, and pepper to taste. Remove from heat.

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Spread a thin layer of enchilada sauce in the bottom of a baking dish. Take a tortilla, add a portion of the beef mixture, and sprinkle some cheese. Roll the tortilla up and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Once all the tortillas are in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Prepare Sides
While the enchiladas are baking, prepare rice and beans according to package instructions. For pico de gallo, combine diced tomatoes, onion, cilantro, lime juice, and salt to taste in a bowl.

Serve
Once the enchiladas are done, let them cool for a few minutes before serving. Plate with rice, beans, and pico de gallo on the side.
