1. Prepare the Ingredients
Rinse the lentils under cold water and set aside. Chop the carrots, celery, onion, and garlic.
2. Sauté Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
3. Add Garlic and Seasonings
Add the minced garlic, thyme, salt, and pepper to the pot. Stir and cook for another 2 minutes until fragrant.
4. Combine Lentils and Broth
Add the rinsed lentils, vegetable broth, and bay leaf to the pot. Stir to combine.
5. Simmer the Soup
Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 30-40 minutes, or until the lentils are tender.
6. Serve
Remove the bay leaf before serving. Taste and adjust seasoning if necessary. Serve hot.
