Cooking Instructions
1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
2. Add Garlic and Tomato Paste
Stir in the minced garlic and tomato paste. Cook for an additional 2 minutes, stirring frequently.
3. Combine Tomatoes and Stock
Add the canned diced tomatoes (with their juices) and the fish stock to the pot. Stir to combine.
4. Season the Broth
Add the bay leaves, dried thyme, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
5. Add Fish and Shrimp
Gently add the fish chunks and shrimp to the pot. Simmer for an additional 5-7 minutes, or until the fish is cooked through and the shrimp are pink and opaque.
6. Serve
Remove the bay leaves. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
