Cook the Pasta
In a large pot, bring salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside.

Grill the Vegetables
In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms, onion, and cherry tomatoes. Season with salt and black pepper to taste. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly charred.

Combine Ingredients
Add the cooked angel hair pasta to the skillet with the grilled vegetables. Toss to combine. Drizzle with the remaining tablespoon of olive oil and mix in the chopped cilantro. Stir well to ensure everything is evenly coated.

Divide the pasta mixture among serving plates. Top each serving with grated Parmesan and shredded Monterey Jack cheese. Serve warm.
