Pulled Pork

    Prepare the Pork

    Rub the pork shoulder with smoked paprika, cumin, brown sugar, salt, and black pepper. Place it in a slow cooker.

    Add Ingredients

    Add sliced onion, minced garlic, apple cider vinegar, BBQ sauce, and water to the slow cooker.

    Cook

    Cover and cook on low for 8-10 hours or until the pork is tender and easily shreds with a fork.

    Shred

    Remove pork from the slow cooker, shred with two forks, and mix with remaining juices.

Spanish Rice

    Sauté Vegetables

    In a saucepan, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté until soft.

    Cook Rice

    Add rice and stir for a couple of minutes. Then add chicken broth, tomato sauce, cumin, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce heat, cover, and simmer for about 20 minutes or until the rice is tender and liquid is absorbed.

Pinto Beans

    Prepare Beans

    In a pot, combine pinto beans, chopped onion, minced garlic, cumin, salt, and black pepper. Add water.

    Cook Beans

    Bring to a boil, then reduce heat and simmer for 1-2 hours or until beans are tender.
