Prepare the Potatoes
Preheat the oven to 425°F (220°C). Cut the potatoes into bite-sized pieces and place them in a bowl. Drizzle with olive oil, salt, and black pepper, and toss to coat evenly. Spread the potatoes on a baking sheet in a single layer.

Roast the Potatoes
Roast the potatoes in the preheated oven for 25-30 minutes or until they are golden brown and crispy, flipping halfway through.

Grill the Mahi Mahi
While the potatoes are roasting, preheat a grill or grill pan over medium-high heat. Season the mahi mahi fillets with salt and pepper. Grill the fillets for about 4-5 minutes on each side, or until they are opaque and easily flake with a fork.

Assemble the Baja
To assemble, place a grilled mahi mahi fillet on a plate. Top with roasted potatoes, pico de gallo, shredded cheese, lettuce, traditional salsa, and a dollop of sour cream.
