Prepare the Filling

Add Seasoning
Sprinkle 2 tablespoons of taco seasoning over the protein/vegetable mixture. Stir well to combine and cook for about 5-7 minutes until the meat is cooked through or the vegetables are tender.

Season to Taste
Season with salt and black pepper to taste. Remove from heat.
Make the Salsa

Combine Ingredients
In a bowl, combine 2 diced tomatoes, 1 finely chopped red onion, and 1 tablespoon of chopped cilantro.

Add Lime Juice
Drizzle 1 tablespoon of lime juice over the mixture and add salt to taste. Mix well and set aside.
Assemble the Tacos

Warm Tortillas
In a separate skillet, warm the soft corn tortillas over low heat for about 1-2 minutes on each side until they are pliable.

Fill the Tortillas
Place a portion of the cooked protein filling in the center of each tortilla.

Add Salsa
Top each filled tortilla with a spoonful of the prepared salsa.

Serve
Serve the taco platter warm with extra salsa on the side.
