Method

Preparation of Salmon

  1. 1

    Prepare the Marinade

In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, and chopped fresh dill to create a marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over the top. Squeeze the juice of the lemon over the salmon, then cover and refrigerate for at least 30 minutes.

Cooking the Salmon

  1. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C) while the salmon is marinating.

  2. 4

    Prepare a Baking Sheet

Line a baking sheet with parchment paper or lightly grease it with cooking spray.

  3. 5

    Bake the Salmon

Remove the salmon from the marinade and place it on the prepared baking sheet. Bake for 12-15 minutes or until the salmon flakes easily with a fork.

  4. 6

    Garnish and Serve

Once cooked, remove the salmon from the oven. Garnish with additional fresh dill and lemon slices before serving.

Optional Side Dishes

  1. 7

    Prepare Asparagus

While the salmon is baking, wash and trim the asparagus. Toss with olive oil, salt, and pepper, then roast in the same oven for 10-12 minutes or until tender.

  2. 8

    Cook Quinoa

In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
