Preparation of Oysters
1. Clean the Oysters
Rinse the fresh oysters under cold running water to remove any sand or debris. Use a brush if necessary to scrub the shells.
2. Shuck the Oysters
Carefully shuck the oysters using an oyster knife. Discard the top shell and place the oyster in a bowl, retaining the liquid in the bottom shell.
Breading Mixture
3. Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well until evenly combined.
Frying
4. Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
5. Coat the Oysters
Take each shucked oyster and dip it into the breading mixture, ensuring it is fully coated on both sides. Shake off any excess breading.
6. Fry the Oysters
Carefully place the coated oysters into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
7. Drain the Oysters
Once cooked, remove the oysters from the oil and place them on a plate lined with paper towels to drain any excess oil.
Serving
8. Serve Hot
Serve the fried oysters immediately with lemon wedges and tartar sauce on the side for dipping.
