Method
Preparation
Making the Cake Batter
Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and semisweet chocolate. Heat in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined.
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture. Stir until fully combined.
Add Flour and Salt
Sift the all-purpose flour and a pinch of salt into the chocolate mixture. Gently fold until just combined; do not over-mix.
Baking the Cakes
Fill Ramekins
Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Cool Slightly
Remove from the oven and let the cakes cool for about 1 minute.
Serve
Run a knife around the edges of each ramekin, then invert onto a plate. Serve immediately with scoops of vanilla ice cream on the side.
