Method

Crust

  1. 1

    Prepare the crust

In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.

  2. 2

    Form the crust

Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup or your fingers to pack it tightly.

  3. 3

    Pre-bake the crust

Preheat the oven to 350°F (175°C) and bake the crust for about 10 minutes, until lightly golden. Remove from the oven and let it cool.

Filling

  1. 4

    Prepare the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

  2. 5

    Add sugar and mix

Gradually add in the granulated sugar and continue to beat until well combined.

  3. 6

    Incorporate sour cream and vanilla

Mix in the sour cream and vanilla extract until fully integrated into the cream cheese mixture.

  4. 7

    Add eggs

Add the eggs one at a time, mixing well after each addition until the filling is smooth.

  5. 8

    Fold in pistachios

Gently fold in the chopped pistachios using a spatula until evenly distributed.

  6. 9

    Pour into crust

Pour the filling over the cooled crust, smoothing the top with a spatula.

  7. 10

    Bake the cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour.

  8. 11

    Cool and chill

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight, to set.

Topping

  1. 12

    Prepare the topping

Before serving, whip the cream until soft peaks form.

  2. 13

    Assemble the cheesecake

Spread the whipped cream over the top of the chilled cheesecake and sprinkle with crushed pistachios.

  3. 14

    Serve

Slice the cheesecake and serve chilled, enjoying the rich flavors and textures.
